Shirley’s Lemon Chess Pie

4 lemons’ rinds grated

2 C. sugar

2 T. flour

1 tsp. cornmeal

4 eggs (beaten)

1/4 C. milk

1/4 C. lemon juice

1/4 C. melted butter

Dash ground nutmeg

Mix first four ingredients.

Beat the eggs, adding milk, lemon juice and butter. Combine dry ingredients with egg mixture. Pour into pie shell. Sprinkle nutmeg on top.

Bake at 375 degrees for 50 minutes. Remove from oven before the pie is totally solid.
