Joan’s Hummus

3/4 C Tahini

1 T. Olive Oil

3/4 C freshly squeezed lemon juice

1 T. chopped garlic

1 t. salt

1/2 t. freshly ground black pepper

1 Can (19 oz.) chick peas, drained and rinsed

1. Combine tahini & olive oil. Stir until well-blended.

2. In food processor or blender, purée lemon juice, garlic, salt & pepper. While motor is running, add chick peas a few at a time, alternating with tahini mixture and a Tablespoon or 2 of water. When the purée is smooth and has a creamy texture, taste for seasoning, adding more salt, pepper or lemon juice if necessary.

3. Put in serving dish and garnish with a sprinkling of paprika. Serve with toasted pita bread, crackers, or raw vegetables.
